Wine Making:
Situated in the department of Yonne, the Chablis vineyard spreads along the Serein River. The Climats are spread between the right and left banks. The Domaine Passy le Clou, owned by the Descombe family, has 21 different plots, each ones vinified separately to show their true identify and characteristics.
Very strict selection of the harvest. Pressing in a pneumatic wine-press, with a very low pressure to avoid any risk of alteration. Static must settling between 24 to 48 hours. Fermentation in stainless steel tank under temperature controlled. Malolactic fermentation. Ageing on fine lees for 15 to 18 months.
Tasting Notes:
Expressive nose, notes of white flowers (hawthorn, acacia). On the palate the wine is Round, expressive, dry with delightful minerality. The finish is clean and long with balanced acidity. Ver elegant!
Paring with cheeses, lighter fish and white meats.
On the nose, pronounced notes of red and black fruit. Bright red col-or with garnet red hints.
An elegant mid palate, expressing a aromatic and fruity bouquet.
Rounded, ample complex late palate and well balanced in the finish.
Food match: salads, perfect match with grilled meats, cold cuts and cheeses.
