Winemaking
Manually harvested at optimum phenolic ripeness,
red wine vinification with an extended maceration on the grape skins and fermentation at controlled temperature; complete malolactic fermentation.
8 months in steel vats and 8 months in bottle.

On the nose, deep red berry and mild spices.
The combination of soft fruity Merlot and a powerful, rich
Refosco, merge beautifully producing a full bodied, savory wine. Full round, soft silky texture on the palate, ripe berries ending in a complexity of spice and light tannins, a long finish and perfect bal-ance
Excellent when paired with heavier dishes, roasts, lamb chops and mature cheeses.
An excellent all round go to wine, and is particularly suited to me-dium strength cheeses, varied first courses, baked fish dishes.
Best served at a temperature of 16-18°C, 60– 65°F
