Winemaking
Organic and Biodynamic. Wine made from the selection of
Albarossa, Barbera and Cabernet Sauvignon grapes produced in the San Pietro vineyards. Hand harvested in October. Following a soft crushing, the fermentation begins and develops naturally without adding additional yeasts. The maceration continues for 15 days and refinement for 2 years in French oak barriques.
Tasting Notes
Intense ruby red color with purple reflections. Intense fragrance notes with scents of raspberries, berries and floral hints, spices and licorice. Full of extractive substance, full and rounded with gentle tannins and sweet and persistent hints in the end. Rich flavors with a fresh and well-balanced structure.
Pairs with cold meats, charcuterie plates, pasta dishes, red meat roasts, braised meats, game and seasoned cheeses.
