Winemaking:
The farm is in Organic conversion, grape harvesting by hand in late September/early October. Soft pressing and indigenous yeast, pump overs once per day. Stainless steel tank fermentation temperature controlled. In tank for 2 years then bottle aging for 2 years.
Tasting Notes:
Nose of stone fruit, and a harmony of citrus. On the palate, great structure and balance, soft texture and excellent acidity. The finish is long and refined. Unlike a northern Riesling, this elegant wine is not overly acidic, and with very low residual sugar, the end is clean, fresh and re-inviting!
