Winemaking:
The farm is in Organic conversion, grape harvesting by hand in late October. The grape is soft pressed, only indigenous yeast. Temperature controlled stainless steel tanks maintain the freshness of the blend. With he majority of the grape, Groppello, the wine is held in tank for four weeks before refining, 20% is
barreled in French oak. Bottling after one year, bottle aging for two years.
Tasting Notes:
Aromas of dark fruit, grass and forest floor. Extreme dark deep red color. Palate of mature red fruit, rich plum and light pepper. Soft inviting acidity, light tannins and balanced minerality adds texture to the continuing complex flavors. A long finish of rich dark berries, tar, anise and pepper.
Paring with rich hard cheese, salamis, roasted heavier meats and vegetables.
Serving Temperature: 16ᵒ-18ᵒC / 60°-64°F
