Winemaking:
The farm is in Organic conversion, grape harvesting by hand in early October.
The wine making procedure invented by Molmenti in 1896 involves racking the wine to lift the skin from the must, only indigenous yeast and delicately pressing the grapes, leaving them together with the skin for just a few hours (hence the name 'overnight wine'). This achieves the famous pale pink color of Chiaretto.
Tasting Notes:
Beautiful salmon color. On the nose light red berries and an earthy scent. Soft texture on the palate with expressions summer berries and balanced minerality. Light acidity, pushes the strawberry, cherry and mixed fruit to a long and elegant finish.
This is a wine to be enjoyed with friends during special times, sunsets and lakeside picnics. Pair with soft cheeses, salads, white fish, lighter meats.
