Winemaking
Grapes are carefully hand-picked and handled with a modern vilification system which permits the winemaker to use extremely low doses of added sulfites. Fermentation on skins with wild yeast for 7days in stainless steel tanks under controlled temperatures of 27°-29°C, with variable pumping of the cap and pump over. punch-downs. Followed by 4 months aging in stainless steel tanks and the bottle ageing in cellar for 4 months before release.
Tasting Notes
Ruby red in color with ageing tends toward garnet, with intense aromatic red berry aromas, cranberry and light notes of anise. Flavors of blended small red fruit and spice of black pepper.
On the palate, smooth and light with light body and texture.
A persistent blend of ripe spring and summer berries, and
lingering spice on the pallet and in the glass!
