Winemaking
Manual harvesting in early October with the finest selected grapes. The grapes are allowed to dry out, concentrating flavors and providing the classic “raisin” profile. Fermentation begins after Dec. 1st of the vintage year and continues for 25 days with daily pumping over. Aged in oak barrels for 30-36 months with further refinement in bottle for 12 months in temperature
regulated cellars.
Tasting Notes
Garnet red in color with persistent ripe fruit. A rich wine, with flashes of velvet undertones. Perfect with cheeses, meats, and even rich vegetarian dishes, also an excellent conversational wine. Extremely well rounded and versatile.
Recommend opening 1 hour before serving.
