Winemaking
Grapes are hand harvested from a blend of our 6 different plots, of organic vines averaging 25 years old. Elevation of 2600 to 3000 feet above sea level, where the plots run down to a couple of hundred meters above the banks of the Duero River.
The selection is both in the field and in the winery.
First cooling the grapes to 5°C and cold maceration for one week in stainless steel tanks, This results in locking in the fullness of the fruit.
Then gradual warming to 15°C. when fermentation begins with indigenous yeast of the estate. Aged 12 months in 2 year old used French Oak barrels.
