The estate is close to the sea, a Continental Mediterranean climate with little rain falling only in autumn and end of spring. Protected from the spring frosts. Hand harvested I mid September, selected grapes from organic plots of Macabeo, at the elevation of 750m above sea level. Soft pressing and fermentation in temperature controlled stainless steel tanks for 5 to 7 days. Natural yeast indigenous to the plots.
Bright light straw color. Fresh aromas, of citrus and green apple on the nose. Soft texture with hints of white flowers and vanilla in the mid palate. Balanced acidity, dry, long minerality, finishing with notes of vanilla and graphite.
Pairs exceptionally well with shellfish, fish, white meats and rice dishes
