Wine Making:
Manual harvesting with direct pressing - pneumatic press . Spontaneous fermentations via yeasts and indigenous bacteria, of which 30% in French oak barrels of 228L -and 70% in Demi-muids of 600L - of which 7% of new barrels.
Aging on fine lees is carried out for 12 months in barrels and 4 months in thermoregulated stainless steel tanks.
Tasting Notes:
Very fragrant nose, beautiful minerality on the palate, with notes of ripe yellow fruits, white flowers and an iodine finish. Soft texture and long fresh finish of citrus and late bloom flowers.
Pair with fish in sauce, or ham with “Côtes d'Auxerre" such as
Chablisian ham, poultry, veal rice with cream, or white fish dumplings.
