Winemaking
This wine is produced with Montepulciano grapes cultivated on young vineyards in Nocciano, following the principles of organic farming. Grape harvest takes place during the 1st and 2nd weeks of October, depending on ripeness. Grapes are picked by hand, respecting their wholeness and the organoleptic peculiarities that will come out with the wine. After the selection of the best grapes the same are pressed, and then skins are kept in contact with the
must for 10-15 days at a controlled temperature of 15°C for the first 3 days and at 28-30°C for the following
ones.
During this time, periodic pump overs are carried on in order to allow the extraction of the skins’ noble elements that will bring wine’s personality. After this extraction phase, the wine is separated from the
skins by soft pressing. A part of the mass is aged in wood for some months and then reassembled with the rest of the wine aged in steel tanks . Malolactic fermentation takes place in wood and steel
respectively.
Tasting Notes
Ruby red, intensely fruity and augmented by soft floral hints. Pleasantly soft on the palate with strong middle body and good persistence. Excellent with salami, pasta, matured cheeses and lean meat dishes. Also pares with fish dishes and spicy tacos!
Serving Temperature: 18-20ᵒC and allow wine to breath.
