Winemaking:
25 year old vines, under an Atlantic microclimate, on calcareous clay and very Stoney soils that offer mineral notes. Dry farmed without irrigation. Careful hand harvesting in small baskets, the best clusters, the healthiest and richest grapes.
12 hour cold maceration, 12 days fermentation in stainless steel tanks. Aging on the lees for 2 months. Bottling takes place in March.
Tasting Notes
Pale yellow with greenish hues. Primary aromas of apple, and citrus such as lemon and grapefruit, fresh, very fine and delicate
background. Soft smooth texture, long floral finish with firm yet balanced acidity.
Serve with mild and soft cheeses, fish or roasted poultry dishes.
