Winemaking
This historic estate is family owned and operated for over 400 years, since 1644. First established by the Pope of Siena, Pope Bichi in the early 1300’s. Estate grown grapes are hand harvested in late October using strict selection to ensure each grape has a good level of acidity and phenolic ripeness. Perfect integrity and ripeness is mandatory to make the Vinsanto blend. Clusters are racked to dry and pressing takes place after 2 to 3 months of drying. After maceration and using only natural yeasts, the wine is aged in old French oak casks. In attick where it undergoes extreme cold in the winter and intense heat in the summer months. Bottling occurs after the wine reaches 10 years of barrel.
Tasting Notes
This amazing Vinsanto is like non other! A beautiful golden hue, on the nose a powerful, expression of intense aromas of plum, apricot, and spice. The palate is full, round and silky texture. Apricot, sweet golden plum mixed in Carmel and soft spice. Notably structured with finesse and softness resulting in an
extremely harmonious blend. Pairing a 2 ounce pour with roasted chestnuts, grapes, cantuccini (Italian Biscotti), or strong ripe cheeses.
