Ruby red with garnet tones; intense aromas of sour Morello cherries and spice. Good structure with soft and harmonious flavors that match the nose and a long finish. Pair with mature cheeses, roasted & braised red meat and lamb dishes. Serving Temperature: 16°C / 60°F
Winemaking
Hand harvested grapes in early October from estate vineyards. The wine is held 12-15 months in 500 liter barrels and cement vats. After bottling, the wine ages an additional 4-8 months at a controlled temperature before its release.
