Winemaking
From the village of Santo Stefano,
hand picking in small baskets beginning in mid September.
Soft pressing of the must, cold maceration for 24/36 hours, it is fermented in tanks at a controlled temperature for 7 days, and then there is the second fermentation, blocked with cold temperature. The wine is microfiltered and bottled with sterile and isobaric method in order to maintain the natural CO2.
Tasting Notes
Straw yellow. Distinctive scent with hints primarily of
Moscato grapes, honey, rose, lime blossom and acacia.
On the palate, sweet and soft notes of fresh citrus, aromatic with good structure. The sweetness fades gentle and is not overpowering however, pleasantly balanced.
A real treat for those of you who enjoy a very Original, Piedmonte semi-sweet sparkling Moscato. As an original, this wine is only 5% alcohol and can be paired with appetizers like leafy salads with fresh herbs, fresh salami accompanied by figs or melon. Even try with Oysters! But of course, if you want to save the best for last, serve chilled with plain sponge cakes, fruit tarts, or sweet biscuits, ice creams or gelatos!
