Winemaking

Vineyard elevation of 600M (2000 ft), Grapes are hand harvested in small baskets of 18 kg. Low yield.  Cold maceration, fermentation with skins for 15 days at 18 to 19°C .  On the lees for up to 30 days.  Bottling takes place in January.

Tasting Notes

Pale yellow with greenish hues. Primary aromas of apple, pineapple white flowers. Soft texture and apples, almond and cherry flowers, finishing with clean fresh fruit.

Serve with mild and soft cheeses, fish or roasted poultry dishes.
