Winemaking

Vineyard elevation of 600M (2000 ft), Grapes are hand harvested in small baskets from vines averaging  over 30 years old.  Low yield.  100% traditional, pre-fermentative cold maceration,  then fermentation with skins for 8 days at 28°C .  On the lees for up to 15 days. Malolactic fermentation in Oak barrels. Aging for 14 months in used French and American barrels.

Bottling takes place in July.

Tasting Notes

This wine has intense, deep ruby color,  intense aromas of  rich ripe red fruit, black cherry and vanilla.  Mid palate silky with notes of Licorice and Vanilla.  Finishing with a balanced elegance, Late flavors of tobacco,  licorice, and mushroom.

Very well balanced,  soft and very smooth tannins.

Serve with Manchango Cheese, roasted or grilled and red meats.

 

Serving Temperature: 18° to 20°C  / 66° to 70°F
