Winemaking
This Nero d’Avola blend is sourced entirely from organically ac-credited vineyards. Harvested by hand in mid August, the must is treated with pump-overs to achieve color stability and maxi-mum extraction. Thereafter reductive handling and fermentation for 15 days at 13-15° C. Maturation in stainless steel tanks for two months prior to bottling.
The soil types and the influence of the sea , which is not far away, makes the wines full body, well balanced and rich of aro-mas. The wine expresses the minerality of the Mediterranean island soils.
Tasting Notes
Deep red with purple tones. The nose provides a mix of red cherry and raspberry. The palate is true to the nose with primary red berry and a mineral-like acidity. This rustic and robust wine pairs well with crab cakes in spicy red pepper sauced as easy as it does with beef dishes and hearty aged cheeses.
A portion of the proceeds are donated to the non-profit Wyland Foundation for marine conservation and education.
