Pale straw yellow with a delicate nose characterized by notes of peach, apricot, and sun dried hay. The crisp, balanced, well orchestrated palate closely echoes the nose. Excellent with vegetable hors doeuvres, soups and starters, grilled fish with sauces, Parma ham and melon, and soufflé.

Giol is the oldest bonded winery in Italy, registered in 1427 and has been farming organically since 1986.
Winemaking
Manually harvested at phenolic ripeness then crushed, de-stemmed and pressed using the very best monitoring and production technologies to maintain purity. The wine then settles, is racked off, and cultured yeasts are added. The wine then waits in controlled cold fermentation at 16C. Fermentation is followed by further racking, and the wine is kept on fine lees with regular batonage. The finished wine is kept in airtight and temperature controlled barrels and bottling is carried out several times a year on demand in order to ensure an always fresh product. The wine is stabilized and bottled in sterile conditions following aseptic filtration.
