Winemaking
Produced with Montepulciano grapes cultivated on young vineyards in Nocciano, following the principles of organic farming. Grape harvest takes place during the 1st and 2nd weeks of October, depending on ripeness. Grapes are picked by hand, respecting their wholeness and the organoleptic peculiarities that will come out with the wine. Winemaking is carried out in respect of tradition and observing the most modern winemaking methods. Brief cryomaceration with the best grapes for about 7-10 days at a controlled temperature of about 15C for the first 2 days and at 25-27C for the following ones. Soft pressing followed my alcoholic and malolactic fermentation, aged in steel, stabilized and bottled.
