Winemaking: Hand harvesting of bunches in small 20 kg baskets at the end of August before the bunches fully ripen, when the acidity still stands out. After careful selection, the grapes undergo a soft pressing immediately after manual harvesting. The must thus obtained is left to decant and subsequently fermented at a controlled temperature (17 – 18°C) in steel barrels. In spring the base wine, with the addition of sugar and selected yeasts ("liqueur de tirage") is bottled. The bottles are laid horizontally in large stacks, in an environment at a constant temperature of 12 to 14 degrees C, where they will remain for at least 18 months for secondary fermentation. Subsequently the bottles pass to the "remuage" (shaking) phase with the aim of detaching the lees sediment from the walls of the bottle and leading it to the cap of the inverted bottle. The disgorgement phase then follows, the bottles will be topped up by adding a small dose of "liqueur d'expédition". At this point the sparkling wine is corked and left to rest for a few months before being sold. Minimum 24-36 months in bottle on its own yeasts
