Winemaking
This 100% Pinot Grigio is sourced entirely from organically ac-credited vineyard. Harvested by hand in mid August, the must is treated with pump-overs to achieve color stability. Thereafter reductive handling and fermentation for 15 days at 13-15° C. Maturation in stainless steel tanks for two months prior to
bottling.
The soil types and the influence of the sea, which is not far away, makes the wines full body, well balanced and fresh citrus aromas.
Tasting Notes
This exotic example of Pinot Grigio has a straw to pale gold color at first sight. In the nose, fresh and clean notes of pear, green apple and white peaches. The palate is true to the nose with a fresh acidity, coriander and lime characteristics followed by a crisp finish. Perfect with salads, fish and chicken.
A portion of the proceeds are donated to the non-profit Wyland Foundation for Marine Conservation and education.
